Mediocre Kitchen Madness: November Edition

– I’m Maggie and welcome to Mediocre Kitchen Madness! 

– Each month, we’ll be bringing you a new recipe inspired by the season. This month’s recipe is Nutmeg Ginger Apple Snaps, inspired by the Wes Anderson film Fantastic Mr. Fox. 

– Haley found the recipe in a TikTok video by user @jalenlcraig and sent it to me a couple of weeks ago. Ever since, we’ve wanted to try it out. Now, let’s get cookin’. 

 

First, you’ll need to acquire all of the ingredients for your snaps.

  • 3 apples
  • ¾ cup butter
  • 1 cup white sugar
  • 1 tsp vanilla extract
  • 1 egg
  • ¼ cup molasses
  • 2 ¼ cups all-purpose flour
  • 1 tbsp cornstarch
  • 2 tsp ginger
  • 1 ½ tsp cinnamon
  • 1 tsp nutmeg
  • 1 pinch cloves
  • ¼ tsp salt
  • Granulated sugar (as much as needed)

Once you have gathered all of your ingredients, soften the butter and cut it into a few pieces. 

 

– DON’T MELT THE BUTTER! *cough* Maggie. *cough*

– Also, use real butter unless you know how to cook with a vegetable-based butter. We clearly didn’t.

 

Then, place your butter in a bowl with a cup of white sugar, and blend with a hand mixer.

After your butter/sugar mixture is combined. Add the egg…

 

– Also, add the shell of the egg. Then scoop it out with a fork.

– Actually, Maggie, I think I did pretty well with cracking the egg.

– Yeah that’s why I let you do it or else these snaps would’ve been extra crunchy.

 

…and the vanilla extract, then blend again with the hand mixer.

Next, fold in the molasses with a spatula.

 

– Break the spatula in the process if you’re Maggie.

– I’d like to say I’m just very strong, thank you very much.

– Or you just need better spatulas.

 

In a separate bowl, add the flour, corn starch, ginger, cinnamon, nutmeg, cloves, and salt and whisk it together.

 

– How much is a pinch of cloves?

– Way less than what you put in the bowl.

– Oops. 

 

Combine the two bowls, using a (not broken) spatula and mix the contents together.

Preheat your oven to 325 degrees Fahrenheit.

Now, take the apples, twist off the stems, and cut them into thin slices.

 

– This step is literally impossible.

– If you can do it, you’re either a magician, wizard, or at least more talented than us. 

 

After the apples are sliced, take the dough and roll it into 2-3 inch balls.

 

– Or 5 inch balls, whatever floats your boat.

 

Roll the dough balls in some granulated sugar…

 

– Actually, discover you have no granulated sugar, and make a mixture of brown and white sugar for funsies.

– Yeah, for funsies.

 

…and place them on a cookie sheet with about an inch or two in between. Place an apple slice on each of the dough balls and press down until you can see the dough around the apple.

 

– Don’t press down too hard.

– And don’t put an apple on both sides of the dough because then you’ll wonder how one of the apples teleported through the cookie when you take them out of the oven.

 

Put the snaps in the oven for about 20 minutes, or until the edges are crispy.

 

– We ended up leaving them in for 25 minutes, so just use your best judgement.

– They still didn’t look done, though.

 

Take the snaps out of the oven and let them cool on a cooling rack.

 

– Add a singular sugar eyeball to one of the cookies… just to leave everyone wondering. 

– I was definitely wondering.

– Overall, I’d give this a 6/10, but I think we could’ve done so much better.

– I agree, 6/10. We probably should have used real butter…

– And less cloves.

– …and maybe could have tried adding the apples halfway through baking so the middle wasn’t so doughy. 

– Maybe next fall we’ll try again. In the meantime, we need to start thinking of a recipe for December!

– For sure… snow ice cream!?

– If we even get snow this year…
